    The impromptu afternoon

    It started with a quick text and turned into something better. A garden table, a bit of sun, a few good people and no real plan. Fruit’s warm, drinks are cold, and time slips away. Nothing fancy—just a reminder that life doesn’t always need a reason.


    Dish

    Burrata with fruit salad

    Ingredients

    6 x Oxheart Tomato, 2 x Red Shallot, 1 or 2 x Burrata, Olive Oil, Balsamic Vinegar, Basil, Dill

    Recipe

    1. Slice tomato into even, thick slices and place on serving plate
    2. Thinly slice shallots and sprinkle on top of tomato
    3. Tear burrata in half and place on top of dish (I use 2 burruta)
    4. Drizzle with good quality extra virgin olive oil, a splash of balsamic vinegar, and a heap of salt and pepper
    5. Tear basil leaves and place these on top alongside some fresh dill
