Waves crash just down the way, but it’s the stories that keep rolling in—half true, half remembered, and kind of the whole point.

Fish tacos
Ingredients
Vegetable oil, 4 x Eggs, Plain flour, Paprika, Kupee mayo + Siracha, Corn tortillas, White fish (I use flathead), 6 x Spring onion, 1 x Red Capsicum, 3 x Tomato, 2 x Jalapeno, 1 x Lemon
Recipe
- Thinly slice all spring onion, capsicum, tomato and jalapeno and keep in separate bowls
- Mix Kupee mayo with siracha (2 thirds : 1 third) and set aside in bowl
- Place plain flour with a sprinkle of paprika in bowl (enough to colour the flour well), and season with salt
- Whisk eggs in separate bowl
- Dip fish fillets into flour seasoning, then into egg, and back into the flour seasoning to coat
- Heat veg oil in pan and shallow fry fillets (this should only take 1-2 mins)
- Once the fish is cooked, lightly fry the corn tortillas in frying pan (wrap in alfoil to keep warm)
- Place fillet on tortilla and serve with other ingredients on top
- Finish with sauce and a drizzle of fresh lemon juice
