Steak with chimichurri
Ingredients
Good quality sirloin (or cut of your choice), Olive Oil, Chimichurri, Handful Parsley, Handful Coriander, Handful Chives, 3 x Garlic, 1 x Fresh Chilli, Olive oil, Red wine vinegar, Lemon
Recipe
- Season steak with oil and salt 1.5 hour before cooking and leave at room temp
- Prep potatoes (your way). My way is to par boil, then roast in 75% duck fat, 25% butter and a heap of salt because it’s good for the soul
- Heat ceramic egg/bbq/good quality pan
- Cook steak – high heat on both sides, and make sure you leave to rest. While resting apply pepper (I use white peppercorns)
- Prepare Chimichurri by thinly slicing all greens, garlic and chilli, and cover with good quality olive oil, red wine vinegar and lemon juice. Season with salt and pepper to taste
- Slice steak on board, pour chimichurri on top and serve with potatoes
